I've joined the...

Menu Monday bandwagon.

I love having a menu and I grew up with a mom who lived by a menu. But, I've found myself not committing one to paper very often. I have a mental tally of what's in the freezer and fridge, sooo... my menu sort of floats up in my head until I need to retrieve it. Trust me when I say this isn't always a reliable source. I've joined the menu Monday bandwagon to give my brain a respite and to be a tad more organized.

I'm only listing my dinner menu to get my feet wet. I've also created another blog Little Red Hen & Co. to link the recipes I use (still under construction). The name came, as I'm sure you've surmised, from the ever popular childhood story. It was one of my favorites growing up. Today, I identify with the main character because I do all the cookin' and everyone wants to do all the eatin'.

Several items on our menu are already cooked and in my freezer. I have a cook once eat twice philosophy (coet). I will cook a double portion of something, serve it once, freeze the other half, and serve it at a later date.

Monday
BBQ chicken (coet)
Potato Fans
Green Salad
rolls with butter
Watermelon

Tuesday
Taco Salad w/all the fixings seasoned ground turkey (coet), beans, cheese, sour cream, guacamole
Fruit salsa & cinnacrisp tortilla chips

Wednesday
Dinner @ Church
(I think it's baked ziti and meatballs)

Thursday
Soup, Salad, & Sandwich
Chicken/Rice soup, Mandarin salad, Egg Salad minis, apple slices

Friday
Build your own Kabobs
chicken & shrimp, pineapple, green pepper, onion
Olive oil and Vinegar green salad
Bowl of grapes
