I've always enjoyed...

cooking. My mother taught me how to cook from a young age. Since having children I would say the cooking experience has been less than pleasurable. My kids are weird eaters. Something as simple as a peanut butter and jelly sandwich (YES, I know that's not cooking, follow me here, it's an example) Zack likes peanut butter only, Wesley in recent years doesn't like sandwiches at all, Clay and Luke like jelly only if you can even get them to eat it. Now, Mac & Cheese-- I make awesome Mac & Cheese. My kids like, well...one likes my homemade, one likes the blue box, one likes the yellow box and one may or may not eat any of depending on his mood (can anyone guess who that might be?)

The one meal all my kids agree on is breakfast. They love breakfast for breakfast, breakfast for lunch, breakfast for dinner and breakfast for snack. I for one have NEVER been a huge fan of breakfast (I'm a brunch kinda' gal, I LOVE BRUNCH.)

In order to cook a fast hot breakfast I've been coveting an electric griddle for years. I knew I could do the quantities I needed to feed the hungry masses pancakes, bacon, eggs, potatoes and on and on, on a griddle, in no time. But, I also LOVE to cook in cast iron. I received two cast iron skillets 20 years ago as wedding presents and I enjoy them so much. Needless to say, I put off the purchase of a griddle because I had a more than competent cooking vessel. No, I take that back, I purchased a griddle a few months ago, but money was tight so I kept it for a week and then returned it to the store (UN-used and in the box, I know what your thinking.)

Last week I found a great deal on a little griddle. I bought it! I'm beyond thrilled with it. We've had pancakes once for dinner and once for breakfast. I even made homemade hashbrowns to go with the pancakes.

I purchased the Presto Cool Touch Griddle. It's the perfect size for our family. It heats up fast, cooks evenly and even Chef Wesley enjoys cooking on it too!

If you are in the market for a griddle I recommend this one. Don't pay more than $18.00. It can be purchased that inexpensively.

I have the same griddle and I share your love of cast iron cooking as well... HAHAHAHA! We had monster shaped pancakes for breakfast today...
